Achiote (lat. Bixa orellana) is a shrub or tree reaching a height of 5-10 meters. The Czech achiote is best known for its seeds, which are the source of the food coloring bixin, which is added to rice, cheese, Mexican dishes, and as a substitute for saffron.
The Indians used the seeds as a dye for the body, hair and made ink from it. Achiote leaves then became part of folk medicine. For example, tea is prepared from them.
